It’s fresh, healthy, easy and super quick. This is quite simply the most delicious salad you’ll try all summer for a lazy lunch at home or as a take-a-long to your office or to a summer garden party!

This salad reminds me my beautiful childhood and our long warm summer days. I grew up in Southeast Europe – Kosovo, and my hometown is approx. 2 hours away from the Adriatic Sea. So, you can imagine the humid continental climate with Mediterranean and oceanic influences that makes the central Balkan Peninsula a perfect region to cultivate this amazing fruit.

Because I love this fruit so much, I try to prepare different recipes and also make easy summer salads, when I’m too lazy to cook something for lunch. I’m sure you have already heard about watermelon and feta cheese salad, but I thought to share my own creation with you that tastes incredibly good.

It is very easy to make, light, fresh, perfect for a lazy lunch at home or as a take-a-long to a summer garden party. You are going to love it!

It took me 15 minutes to scoop, mix and serve – it was that easy peasy.

Now, to make it for two, you’ll need:

  • Watermelon (a bowl full of cubes)
  • Half a block of feta cheese
  • 2 small avocados or one large avocado
  • 1 handful of walnuts
  • Torn handful of dill (optional: coriander leaves)
  • Chia seeds as topping
  • Juice of 1 lime
  • Drizzle of olive oil

Start by cutting your melon into cubes. I took one big melon, cut it in half (with a bread knife) then cut a big slice off the top of that half. Then cubed it. (See below.)

Pop your melon into a bowl or onto a serving plate. Cube your feta and sprinkle around the melon..

I am using my new Magisso bowl and plate that has a cooling function, so that you can keep the salad cool for hours without any ice cubes or freeze.

Grab a handful of dill (or coriander), hold over the salad and snip with scissors until it’s sprinkled all over the top.

Crush your walnuts with something heavy (easier if they’re in a sandwich bag) then sprinkle over the top.

Cut small pieces avocado, sprinkle over the top a bit of chia seeds and squeeze your lime over everything and drizzle with olive oil. Voila, you’re done!

I hope you enjoyed this post and let me know how you liked it! <3
