Fresh summer rolls are colorful, healthy and fun to make with any kind of ingredients which are easy to find or you already have at home. Served with delicious and creamy peanut butter or sweet chilli dipping sauce, these summer rolls are great for lunch, dinner or just as a snack in-between.
The rice paper rolls are gluten-free, vegan, and perfect for plant-based foodies. I tried making them for the first time, and it was pretty easy. I already had lot of veggies, noodles, and fruits at home, so I thought I will give it a try, but the secret to deliciousness are the dips.
Staying at home is never boring when you know how to spend your time wisely. During the past few years, I have been very conscious about the food choices and overall self-care. Eating clean, plant based meals, committing to a 16-hour food break from the last meal of the day to breakfast next morning. Also incorporating workouts, at least 5 days a week— are the essential commitments for a healthy lifestyle.

Few years ago I’ve started the “Food” category on my blog, but unfortunately I couldn’t keep up posting recipes frequently. Since the pandemic has started, I am back to the kitchen for cooking, baking and writing new recipes.
There are so many reasons why I love cooking, but one of the main reasons is that I love incorporating fresh ingredients into meals that makes them healthier than having processed food. I find cooking as a very relaxing activity to practice. Hunting for the ingredients, preparing them and putting them together to make something delicious, puts me in a much relaxed and happy mood than sitting on the couch and watching Netflix.
For the first #QuarantineRecipe I’ve created is this delicious easy vegan brown rice noodle bowl. A perfect dish for spring, which is nourishing, packed with lot of vitamins, spicy, gluten-free and super easy to make. Served with vegetables, brown rice noodles and crispy tofu.
While we are currently physically distancing and staying at home, I am not just decluttering my closet but also my travel photos from past years. Since we cannot travel or go on vacation yet—this post might not be relevant at the moment, but sooner or later we will travel and visit all our favorite places.
On the morning of the tenth day of my self-isolation I called my mother and said, “I’m terrified.”
“About what?” she asked.
I said, “Everything!”
She said, “Remember twenty years ago when we were isolated at home during the war in Kosovo? You said you were terrified and wished to be somewhere else. Now you live somewhere else, but the entire world is facing the same situation. Be patient, we will overcome this as well!”
